Vegan Stuffed Shells

Very similar to the vegan baked ziti recipe, once again, skip the gluten free shells unless you need them:

Ingredients

1 package large shells
1 block Vegan Gourmet mozzarella
1 package soft tofu
1 tbs dried parsley
1 tsp dried basil
1/2 tsp garlic powder
1/4 tsp oregano
1 1/2 cups pasta sauce
Salt and pepper

Vegan Olive Oil Mayo

So much better than store bought vegan mayo:

Ingredients

1-2 tbsp chilled organic raw tahini
2-3 tbsp apple cider vinegar or lemon juice
3-6 tbsp cold plain rice, nut or hemp milk
1-2 tsp raw agave nectar
1/4 to 1/2 tsp sea salt
1/4 tsp paprika
1/4 tsp xanthan gum
1/2 cup extra virgin olive oil
a dab of your favorite mustard

Vegan Mashed Potatoes

Who doesn't love mashed potatoes? Even better without milk and butter:

Ingredients

1 pound potatoes
2 tbsp olive oil
1/4 cup almond milk

Vegan African Sweet Potato Soup

A nice hearty soup in time for autumn:

Ingredients

1 tbs light olive oil or peanut oil
1 tbs red or green curry paste- hot or mild
1/2 tsp cinnamon
1 medium red onion
4 cloves garlic
1 medium sweet potato
1 large yellow bell pepper
1 jalapeƱo or other hot chili pepper
1 can black-eyed peas
1 can white beans
1 can black beans
1 quart light broth
1/2 cup peanut butter melted in a half cup of boiled hot water (for one cup total)
1/2 tsp crushed hot red pepper flakes
2 tablespoons chopped fresh cilantro
Juice from 1 big lime
2-3 tsp organic brown sugar or raw agave nectar
Sea salt and black pepper

Vegan Lasagna

Just swap out the gluten free lasagna sheets for regular if you can:

Ingredients

2 cups sauce
1 box lasagna noodles
1 block vegan gourmet mozzarella cheese
1 package silken tofu
1 tbsp dried parsley
1 tsp dried basil
1/2 tsp garlic powder
1/4 tsp dried oregano
Salt and pepper

Vegan Mango, Cucumber, Avocado and Jicama Salad

Had this a couple of times over the summer and it was great!

Ingredients

1 mango
1 cucumber
1 jicama
1 avocado
1 bunch cilantro
1/2" piece of ginger
1 clove garlic
1/4 cup olive oil
1 lemon
Salt and Pepper

Vegan Quinoa Salad

A great little salad just in time for this weekend's cookouts:

Ingredients

1 clove of garlic
2 1/2 to 3 cups cooked quinoa
1 handful of yellow sweet grape tomatoes
1 carrot
4 scallions
1/4 cup Kalamata olives
1/3 cup slivered nuts - pecans, almonds or walnuts
Sea salt and pepper
1 tbsp chopped fresh basil
1-2 tbsp chopped fresh mint
Extra Virgin Olive Oil
1-2 lemons or limes
