Vegan Quinoa Salad

A great little salad just in time for this weekend's cookouts:

Ingredients

1 clove of garlic
2 1/2 to 3 cups cooked quinoa
1 handful of yellow sweet grape tomatoes
1 carrot
4 scallions
1/4 cup Kalamata olives
1/3 cup slivered nuts - pecans, almonds or walnuts
Sea salt and pepper
1 tbsp chopped fresh basil
1-2 tbsp chopped fresh mint
Extra Virgin Olive Oil
1-2 lemons or limes
